The Slow Cooker (crockpot) is one of the best kitchen appliances you could ever own! It’s one of the easiest ways to get dinner onto the table without spending all day in the kitchen. You can do the prep work the night before or early in the morning. Toss the ingredients into the slow cooker and cook on low all day. By the time dinner rolls around you have a hot meal ready to hit the table.

Before I get to the recipe I want to introduce you to Selefina, the spice shop through Adagio Teas. Selefina sells your classic spices like parsley and oregano…along with chili powder, crystallized ginger root, Cacao nibs, and everything in between. You can purchase samples sizes, regular sizes, refills, and empty spice jars if you need those! High quality, fresh spices and seasonings shipped straight to your door.
For this recipe I used Selefina Parsley Flakes. Their parsley flakes are fantastic! A nice green color, not brown like other brands. You can tell these are fresh (although dried) parsley flakes…not jars that sat on a retail shelf for years. As soon as you open the jar you’ll know that you have purchased quality-made parsley flakes!
Slow Cooker Classic Chicken Corn Soup Recipe
2-3 large boneless chicken breasts, cooked and diced
4-5 cups chicken stock
1 to 1 1/2 cups of water
1/4 cup onions, finely chopped
1/4 cup celery, finely chopped
1/4 cup carrots, finely chopped
6-7 cups of frozen corn, thawed
2-3 large potatoes, peeled and diced
1-2 tablespoons parsley
1-2 teaspoons salt
1 teaspoon ground black pepper
Place all of your prepared ingredients into the slow cooker. You may need to adjust the chicken stock and/or water depending on all of the ingredients that you toss in. Make sure you have enough liquid. Stir everything together. Cover. Cook for 6 hours on the low setting or until done. If you’re not ready to sit down and eat dinner yet…change the setting to warm after the 6 hours of cooking time has passed. Serve with your favorite crackers or bread on the side. My family enjoys homemade cornbread along with their chicken corn soup.

This does sound very good. I have homemade chicken stock that I froze so I might be able to make this soup more quickly.
I have been craving some good homemade soup and this one sounds so good. Thank you for sharing this recipe sounds nice and easy. I love slow cooker recipes.
This sounds so good. With all the raspatory issues right now… just what the doctor ordered.
That would taste so good right now. 19 degrees with a wind chill of 6.
