Last week I picked up a box of the Betty Crocker Suddenly Pasta Salad in the Sweet Basil variety. It includes the pasta, red bell pepper, and a seasoning packet. You can make it plain or toss-in some of your own ingredients like what I do. Below is one of my family’s favorite versions of this pasta salad.
Sweet Basil Pasta Salad Recipe
1 box Betty Crocker Suddenly Pasta Salad in Sweet Basil
1/2 medium cucumber, skin removed, and chopped into pieces
1 small spring onion, finely chopped
2 medium Roma tomatoes, chopped
1/2 tsp. pickle juice
8 green olives, sliced in half
salt and black ground pepper – to taste
Prepare the Suddenly Pasta Salad according to the box directions. Once you have it mixed up, you’ll want to stir in the chopped cucumber, spring onions, tomatoes, pickle juice, and sliced olives. Add a little salt and ground black pepper to taste. Cover the bowl and refrigerate for 2-4 hours to allow the flavors to infuse.

I would add more fresh sweet basil and perhaps a little more pickle juice if I tried this variety of Betty Crocker pasta. I have never tried any of the varieties and I think I should try them.
I use the Betty Crocker Salad in the classic and ranch and bacon variety. I would like to try the Sweet Basil but have not seen it in the stores here. I think the additions would work well in the classic variety too.
This sounds so good. I like adding pickle juice to things. It just gives it a little bit of extra. Thank you for the recipe.
