Honey Bunches of Oats Chocolate and Peanuts Snack Mix Recipe

It’s the dog days of Summer and baby…it’s hot outside! During this time of the year I try to avoid using my oven as much as humanly possible. I use my slow cooker, stove-top, grill, and toaster oven to help keep my kitchen cooler during the summertime.

Today’s recipe utilizes Honey Bunches of Oats Cereal, chocolate, creamy peanut butter, chopped peanuts, a few other ingredients that you already have on hand. It’s a no bake recipe and once cooled…it makes a great snack mix that satisfies your chocolate cravings!

The recipe is similar to those popular no-bake chocolate oatmeal cookies, but you use different ingredients. In my honest opinion, it’s even better!

Honey Bunches of Oats Chocolate and Peanuts Snack Mix Recipe

2 cups Honey Bunches of Oats Crunchy Honey Roasted Cereal
1 cup granulated sugar
1/4 cup butter
1/4 cup milk
1/4 cup cocoa powder
1/3 cup creamy peanut butter
1/2 teaspoon pure vanilla extract
1/4 to 1/3 cup chopped peanuts
1/4 teaspoon salt

In a large saucepan melt the butter over medium heat. Add in the milk, granulated sugar, cocoa powder, vanilla extract, and salt. Bring mixture to a rolling boil. Once boiling time the boil for exactly 1 minute, stirring constantly to prevent scorching. Remove pan from heat.

Stir in the peanut butter until melted. Fold in the Honey Bunches of Oats Honey Roasted Cereal. Fold in the chopped peanuts. Stir with a rubber spatula until cereal is completely coated in the mixture.

Lay out a sheet of aluminum foil or wax paper. Use a rubber spatula to spoon the mixture out onto the sheet of aluminum foil in an even layer, like what’s shown in the photograph. Let it cool to room temperature. Use spatula to break it up into snack-size chunks and place into an airtight container.

Variations: Instead of chopped peanuts you can toss in M&M candies, broken-up slim pretzel sticks, chopped cashews, de-shelled sunflower seeds, etc.

    I like Honey Bunches of Oats as a cereal/! I am sure that I would also enjoy this recipe which does not require the oven, but I think that I would reduce the amount of sugar.

    That sounds like such a great idea. No heating the oven. That is better. I like the M&Ms better than nuts. Just a bit of a sweet treat.
