EL MATADOR Cocktail Recipe
Ingredients:
1/4 cup Tequila
1/4 cup pineapple juice
1 TBSP serrano syrup (see Cocktail Syrups & Emulsions)
1 TBSP fresh lemon juice
martini shaker
GARNISH:
sliced serrano pepper, in rings
dried pineapple slice & ice
Method:
Place all liquid ingredients with ice into a martini shaker and shake completely. Pour into rocks/lowball glass and garnish with serrano and dried pineapple slice.
PAIRING NOTES:
Chilaquiles–the heat from the serrano will work nicely with the hot sauce or tomatillo sauce for the eggs.
Aqua Dulce Cauliflower–the lemon & pineapple will work well with the acid and sweet from the pickling liquid of the veggies.
Lobster Tostada–the butter, lobster & pineapple will have a nice balance on the palate, a richness of flavor.

I can definitely see how people who enjoy serrano peppers will love this cocktail. I do not like a lot of heat so this is not a cocktail for me.
