Last week my daughter needed to bring a finger food snack to her Girl Scouts meeting. As a full-time working Mom, I often don’t have time during the week to bake from scratch. I decided to “cheat” by using 2 packages of classic brownie mixes and then added some delicious goodies! Each package makes one 8″ by 8″ square, so use the appropriately sized baking dishes. Yes, I made 2 batches at the same time in 2 different baking dishes.
I followed the directions on the package and added the called-for ingredients, doubled of course since I was making a double batch. I then stirred in a 1/2 cup of semi-sweet chocolate chips. Lightly spray each 8″ by 8″ baking pan….in my case I sprayed 2 pans. Pour the brownie batter into the pans evenly with 1/2 in each baking pan.
Bake in a preheated 350 degree F oven for about 16-20 minutes depending on your oven. They’re done when the top is lightly brown. They should be soft in the center. You don’t want rock-hard brownies. Remove from the oven.
Sprinkle semi-sweet chocolate chips and miniature marshmallows on top while it’s still steaming hot. You can opt to place back into the oven for a minute or two or just let them sit as-is to soften up. Let the pans cool on a wire baking rack. Once cool, cut them into squares. Package in an airtight container.
The girls loved them and thought they were eating fancy gourmet brownies! Matter of fact, when it’s my daughter’s turn again to bring a snack they’ve requested another bactch of brownies. They’re sweet but not overly-so!

It is always great to add extras to mixes. I sometimes add extra nuts and always a lot of chocolate chips. I have not yet tried to add marshmallows.
I am going to use your trick of adding marshmallows and chocolate chips for a topping next time I make brownies. What a good idea.
