Baked Sweet Potato Casserole Recipe

My family loves sweet potatoes and we eat them year round. We will enjoy them baked, mashed, in a casserole or in a pie. They’re a nice change from your traditional white potato and keep dinnertime from getting boring. A lot of people serve them with holiday meals, but trust me…if your a yam lover…you’ll eat them year round!

One of the reasons I like this recipe is because it uses canned yams instead of fresh sweet potatoes which saves time. I bake it in a 2 quart casserole dish.

Baked Sweet Potato Casserole Recipe

Baked Sweet Potato Casserole Recipe

40 oz. can sweet potatoes
1/2 cup granulated sugar
2 medium eggs
1/2 cup butter, softened
1 tsp. vanilla extract

Topping

1 cup brown sugar
1/2 cup butter, softened
1/3 cup all-purpose flour
1-2 cups miniature marmshallows

Preheat oven 350 degrees F.

In a large mixing bowl combine together the canned sweet potatoes, granulated sugar, eggs, softened butter and vanilla extract using an electric mixer. Pour into a casserole baking dish.

Use that same bowl (no need to dirty another one) to combine together the brown sugar, softened butter, and all-purpose flour. It should be crumbly in texture. Sprinkle the topping on top of the other ingredients in the casserole dish.

Place in a preheated 350 degree F. oven and bake for 35 minutes. Remove. Place miniature marshmallows on top. I like to stir 1/2 of a cup into the casserole mixing everything together, including the topping and then the other 1/2 to 3/4 cup of miniature marshmallows I sprinkle across the top. Place back into the oven for 5 minutes. Remove. Let stand for 2-3 minutes before serving.

    We love sweet potatoes too. However, most casseroles are too sweet for us to eat with a meal. I often substitute bananas or other fruit to make the casserole healthier.

    I grew up eating baked sweet potatoes with marshmallows at lest twice a month. The north is not big fan of sweet potatoes and marshmallows. this looks so good and I have everything to make this

    We have a similar recipe in the South. We use brown sugar and add diced pineapple chunks. I make it on holidays. My friend adds chopped pecans to her topping. All variations are good.
