Mom’s Delicious Blueberry Muffins Recipe

Every 2 weeks I like to make a fresh batch of homemade muffins for my family to enjoy. They make a great go-along with our morning coffee, an afternoon snack or after dinner dessert. When it comes to muffins, I like them moist, not dry. Adding fresh or frozen fruit like plump fresh blueberries takes these muffins over the top!

When shopping for fresh blueberries you always want to inspect them before tossing them into your cart. They should look plump and juicy, not wrinkled or weak. No mold or damage on them at all. I use fresh but you can certainly use frozen blueberries too.

Mom’s Blueberry Muffins Recipe

1 3/4 cups all-purpose flour
1/3 cup granulated sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup fresh, washed blueberries
3/4 cup milk
1 large egg
1/3 cup butter, melted

Preheat oven to 350 degrees F.

In a large mixing bowl combine the all-purpose flour, granulated sugar, baking powder and salt. Gently stir in the fresh blueberries. Stir in the milk, large egg and melted butter until all ingredients are combined. Do not over mix the batter, it will remain slightly lumpy.

Spoon the muffin batter into lightly greased muffin cups or cups that have been lined with paper liners. Bake in the oven for 16 to 20 minutes or until done. Remove and serve warm with melted butter or honey butter.

    “you always want to inspect them before tossing them into your cart” Sad to say you have to do that with all of your product today.

    I am a major fan of blueberry muffins these I might try making. You never said if you ever frozen any.
