This year we’ve been trying to eat healthier and have been incorporating a lot of fish and seafood into our diets. We’ve been enjoying it grilled, baked and/or pan-friend. It’s very versatile and easy to prepare. It can be the main focus on your dinner plate or used as an ingredient in something else. ie. fish & seafood tacos, fish burritos, a casserole, sandwich wrap, etc. #SitkaSalmonShares

Sitka Salmon Shares offers premium wild-caught seafood straight from the boat to your dinner table. How does it work? You can sign-up for monthly seafood box deliveries or just purchase what you need from their freezer section. All of the seafood is harvested in Alaska and the northern Pacific waters by local, small fishermen. It’s harvested in-season and blast-frozen, then delivered to your front door.
My delivery arrived quickly and I was really impressed with how well everything was packaged. It arrived frozen with dry ice. Each piece was individually packaged, labeled and sealed. In my box I received 3 packages of Wild Alaskan Coho Salmon and 2 packages of Wild Alaskan Halibut, along with 2 recipe cards & other information. Check out my notes below the recipe for variations. You can tailor the recipe to your liking with a few easy changes.
Parmesan Ranch Pan-Fried Wild Alaskan Salmon Recipe
1 lb. Wild Alaskan COHO Salmon from Sitka Salmon Shares
3/4 cup Seasoned Bread Crumbs
Tad of Salt and Ground Black Pepper
1/4 – 1/2 tsp. Garlic Powder (depending on taste buds)
1/4 cup Shredded Parmesan Cheese
1 oz. Ranch Dressing Mix (dry powder)
2 1/2 Tbsp. Olive Oil
2 Tbsp. butter, softened
Melt butter in a large skillet over medium heat.
In a measuring cup mix together the Ranch Dressing Mix with the olive oil. Just use a fork and kind of whisk it together. Pour liquid mixture on a rimmed plate and then dip both sides of the fillet into it, coating the sides well.
Place seasoned bread crumbs on a plate. Sprinkle on a little bit of salt and ground black pepper. Add the 1/4 tsp. garlic powder. Lightly stir in the shredded Parmesan Cheese.
Dredge the fillet through the crumbs and shredded cheese mixture, coating both sides. Place into a hot skillet with melted butter. Pan fry each side for 6-9 minutes over medium heat or until fish is done. Cooking time will depend on how thick your fillet is. As it’s simmering, you may need to add additional butter to keep the fish from burning and sticking to the pan.
The fish is done when coating is golden brown and the fish flakes apart when using a fork. Remove from skillet and place onto a plate. Cut into serving pieces and serve immediately with your favorite sides. A freshly made garden salad goes nicely with this fish or serve the fish on a bed of lettuce.
Variations: If you don’t have olive oil you can use vegetable oil. If you don’t like garlic, omit the garlic powder. If you do like it and have fresh garlic on hand you can substitute with a little bit of freshly minced garlic. The type of cheese you use can be switched up too! I’ve made it with shredded Mozzarella, Cheddar, Parmesan, and even an Italian Cheese Blend.
