Slow Cooker Classic Chicken Corn Soup RecipeMy slow cooker is one of my most used small appliances in my kitchen. I use it several times a week to make homemade soups, stews, fruit cobblers, applesauce, slow-cooked barbecue ribs, casseroles, and other meals for my family. I love that I can toss my ingredients in it at the start of my day and by dinner time our meal is ready. No slaving over a hot stove.

During the winter season I like to make big batches of classic chicken corn soup. I typically make it on a Monday or a Tuesday. On Sunday I’ll take the time to cook up my chicken, chop up my onions, cellery, and carrots, and get everything prepared for the recipe. I put it in containers and refrigerate until I’m ready to toss everything together. I do recommend letting them sit on the kitchen counter for 20 minutes to warm up a little bit before tossing them into your slow cooker.

Slow Cooker Classic Chicken Corn Soup Recipe

2-3 large boneless chicken breasts, cooked and diced
4-5 cups chicken stock
1 to 1 1/2 cups of water
1/4 cup onions, finely chopped
1/4 cup celery, finely chopped
1/4 cup carrots, finely chopped
6-7 cups of frozen corn, thawed
2-3 large potatoes, peeled and diced
1-2 tablespoons parsley
1-2 teaspoons salt
1 teaspoon ground black pepper

Place all of your prepared ingredients into the slow cooker. You may need to adjust the chicken stock and/or water depending on all of the ingredients that you toss in. Make sure you have enough liquid. Stir everything together. Cover. Cook for 4-6 hours on the low setting or until done. Serve warm with your favorite crackers or bread on the side.

Notes:  If you want the soup done within 3 hours…cook on the high setting for 1 hour and then the low setting for the remaining 2 hours. This soup freezes well. Let it cool and then spoon into freezer-safe containers leaving a 1″ headspace. Label and freeze for up to 3 months. Thaw overnight in the refrigerator. You can then reheat on the stove-top or the microwave oven.

  1. I am making soup for lunch and dinner these days. It is the right meal for these cold and snowy days. This looks like a heart one. I will take your suggestion to prepare before and be able to throw it all together when ready to make it.
