Red and Green Popcorn Balls for the Holidays

Every year during the Christmas season I like to make a batch of homemade popcorn balls for my kids to enjoy. What’s really nice is that this year both of my children are old enough to help! Having kids help out in the kitchen is a great way to teach them valuable life skills.

Today’s guest post recipe is courtesy of Popcorn.org and will yield approximately 12 cups. Even though these are being featured in the traditional red and green colors you can make them any color that you want. Think pink, purple and orange for Easter, red and blue for July 4th, orange and green for Halloween, etc.

Red and Green Popcorn Balls for the Holidays

12 cups popped popcorn
6 tablespoons butter or margarine
3 cups mini marshmallows
1/2 teaspoon peppermint extract
Assorted colored sugars

Spray large mixing bowl lightly with cooking spray. Add popcorn.

Spread plastic wrap on cookie sheet; set aside.

In medium saucepan, melt butter and marshmallows; stir until mixture is smooth. Stir in peppermint extract. Pour over popcorn, mixing until well coated. Let cool 2 minutes.

Spray hands with cooking spray and form popcorn mixture into 3-inch balls. Gently press colored sugar onto balls. Let sit on prepared cookie sheet until cool and set.

Store balls in an airtight container, storage bag or wrap them in plastic wrap to keep them fresh.
