This year we’ve been trying to eat healthier and have been incorporating a lot of fish and seafood into our diets. We’ve been enjoying it grilled, baked and/or pan-friend. It’s very versatile and easy to prepare. All of the seafood is harvested in Alaska and the northern Pacific waters by local, small fishermen. It’s harvested in-season and blast-frozen, then delivered to your front door.
My delivery arrived quickly and I was really impressed with how well everything was packaged. It arrived frozen with dry ice. Each piece was individually packaged, labeled and sealed. In my box I received 3 packages of Wild Alaskan Coho Salmon and 2 packages of Wild Alaskan Halibut, along with 2 recipe cards & other information. Over the next couple of weeks I’ll be sharing more info with you about the company, the fish and the recipes that I’m trying.
Baked Salmon Noodle Casserole Recipe
2 cups uncooked macaroni
2 to 2 1/2 cups cooked salmon, bite-size pieces
olive oil
1 can cream of celery soup
3/4 cup milk
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup to 3/4 cup peas
2 tbsp. melted butter
1 cup seasoned bread crumbs
salt and ground black pepper to taste
Spray baking dish with non-stick spray. Preheat oven to 350 degrees F.
Prepare the Salmon: Pan-fry the Salmon in a little bit of olive oil until done on both sides. It’s done when it will easily flake apart using a fork. Set aside.
Cook macaroni (to almost done), drain water.
Pour macaroni, cooked salmon, canned soup, milk, shredded cheddar cheese, mozzarella cheese and peas in a large baking dish. I use a 3 quart casserole dish. Use a spoon to stir everything together. Pour melted butter on top. Sprinkle the seasoned bread crumbs over the top. Add salt and ground black pepper to taste.
Place baking dish in a preheated oven and bake for 25 to 30 minutes. Remove. Let stand 5 minutes on the stove-top before serving.
