Last week my husband dug up and harvested all of our red beets that we had planted in our garden. Amongst the red ones were a few white ones. Many people are familiar with the red ones and have never seen a white one. We’ve seen them a few times but not often.
From the research that I read online it can be common to have those seeds mixed in with your red ones when you purchase them. Or perhaps you bought young plants and planted those. In some instances it can be a part of the breeding too. Heck, there are a few “white” varieties out there that are popular with gardeners for their so-called sweetness.
Are white beets edible? Absolutely! You prepare them the same way as your reds. You can sort them out and make just a batch of whites (if you have enough) or just do what we do and that’s to toss them in with our reds. In my honest opinion, I prefer the reds because they taste better.
