Creamy Cucumber Salad RecipeDuring the summer growing season I make a fresh batch of creamy cucumber salad for my family to enjoy. Our garden puts out a lot of cucumbers, so I’m always looking for ways to use them up. This is one dish that even the kids will enjoy.

There are a lot of recipe variations to making homemade cucumber salad. The way that I like to make it is below. You can toss in finely chopped onions and/or halved cherry tomatoes too. I often do that for variety.  The amount for each ingredient depends on the size of the cucumbers and your own taste buds. I suggest taste-testing as you go along and tweak it to your own taste buds.

Creamy Cucumber Salad Recipe

1-2 fresh cucumbers
1/2 cup sour cream
1/4 cup reduced-fat mayonnaise
2-3 Tbsp. granulated sugar
1-2 Tbsp. white vinegar
dash of salt
dash of ground black pepper
dash of celery seed
dash of dill

Peel cucumbers and slice into rounds. I like to make mine semi-thick so that they stand-up to the dressing.

In a medium-sized bowl combine together the sour cream, mayonnaise, granulated sugar, white vinegar, salt, ground black pepper, celery seed, and dash of dill. Stir all of the ingredients together until you get a nice dressing. Taste-test it. You can sweeten it up or make it a little more creamy by adding additional sour cream.

Place the cucumber slices into the dressing and stir to coat. Cover the bowl and place into the refrigerator for 2-4 hours to allow the flavors to infuse. This is BEST when it has been well-chilled!

    I like this recipe. I would add more dill, preferably fresh dill because I love the taste with cucumber and with sour cream.
