Classic Garlic Fried Potatoes RecipeWe eat a lot of potatoes and enjoy them prepared a wide variety of different ways. We like them basked, baked, grilled, fried, you name it, we like it! Potatoes are one of the most versatile vegetables to use and they’re a great source of potassium.

Last week I decided to make garlic fried potatoes and they turned out better than I expected. They were a big hit with my husband! I grow my own parsley, so I used fresh but you can certainly used dried. You can use white or red potatoes, whatever you have on hand.

Classic Garlic Fried Potatoes Recipe

5 large potatoes
1 clove garlic, minced
2 tablespoons onion, finely chopped
2 teaspoons parsley
salt and ground black pepper to taste
butter

Peel potatoes with a vegetable peeler. Slice them into 1/8″ slices. Fill up a large pot with water. Bring water to a boil, add slices. Boil the slices just until fork tender. Drain water.

In a large fry pan add butter. I believe I used about 3 tablespoons of butter. Toss in your minced garlic, finely chopped onions and parsley. Stir until the butter coats everything. Add in your partially cooked slices, stir until everything is coated in butter and combined. Sprinkle on salt and ground black pepper to taste. Simmer on low heat until the potatoes are soft and cooked through. Remove from heat and serve immediately.

On the day that I made them I served them alongside grilled lemon pepper chicken breasts and lima beans. I will often make fried potatoes and eat them for breakfast or lunch all on their own.
