Easy Chicken Tacos RecipeWe love Mexican cuisine and try to eat something Mexican every Tuesday night for dinner. Often times it’s some type of taco since they’re easy-to-make, but we enjoy making quesadillas, burritos, nachos, fajitas, etc. too. All of these are versatile! You can use chicken, ground beef, ground turkey or fish in your filling to keep things interesting.

Last week I prepared these delicious Chicken Tacos which are super easy-to-make! You can make them on the mild side or spice them up. You can stuff your tacos with your favorite fillings or whatever you have on hand. Serve them in hard shells or soft shells. This recipe makes 2 servings with each person getting 2 fully stuffed tacos. You could stretch it out to feed 3 people if needed.

Easy Chicken Tacos Recipe

1 lb. skinless, boneless, chicken breasts
1 pkt. dry taco seasoning mix
2 tbsp. olive oil

Use a knife and cut the skinless, boneless, chicken breasts into strips or dice into cubes. Add 1 tablespoon olive oil to a skillet. Toss chicken into skillet, stirring to coat them in the olive oil. Simmer over medium heat for 4 minutes.

In a measuring cup mix together 1-2 tablespoons of dry taco seasoning mix with the other tablespoon of olive oil. If you like your tacos spicy and with more heat…use 2 tablespoons. If you like them on the mild side, use 1 tablespoon. Pour this mixture into the hot skillet with the chicken pieces. Stir to coat.

Simmer over medium heat for 4-7 minutes or until the chicken is no longer pink. It should be done. Remove chicken with a slotted spatula or spoon and place on a paper towel lined plate.

Suggested Fillings: the prepared chicken (see above), sour cream, diced tomatoes, shredded lettuce, shredded cheese, salsa (we like adding peach mango salsa), refried beans, etc.

We prefer using soft tortilla shells and warm them up in the microwave for 30 seconds. Then load them up with the chicken and our desired fillings. Roll up and use a wooden toothpick to secure.

Note: I pour my dry taco seasoning mix into an empty spice container (the portion I don’t use) and save it for next time. My one friend just folds up her packet, tapes it shut. I personally prefer pouring it into an empty spice container. Just make sure you label the contents.
