Betty Crocker Delights Mint Chip Brownies
A few weeks ago my 12 year old granddaughter spent the weekend with us. The Princess loves to bake and used to take monthly classes at a nearby bakery. The classes have been on hiatus over the course of the pandemic and she has been missing them. I think its great for children to learn how to cook and bake at a young age!

Our grocery store was running a sale on the Betty Crocker Delights Mint Chip Brownie Mix for .50 cents a box! Yes, fifty-cents so I grabbed two of them on my shopping trip. The Princess saw them sitting in my pantry and wanted to make one. You only need to add 3 ingredients (egg, vegetable oil and water).
She sprayed my 9″ by 9″ square stoneware baking pan with non-stick spray. She poured the brownie mix into the mixing bowl and added the three called-for ingredients. She used the electric hand mixer on low speed to mix everything up (about 40 seconds) and then poured the batter into the baking pan.
Bake in a preheated 350 degree oven for about 20-25 minutes and they were done! She removed them and left them cool. The box included a little packet of mint chocolate chips. You add a little bit of vegetable oil in a measuring cup along with those mint chocolate chips. Microwave until melted and smooth. You drizzle that over-the-top of the cooled brownies.
They turned out fantastic! She did a really nice job making them. We love brownies and I would say that they have more of a fudgy consistency to them. They weren’t all dried out and cake-like. Nice and moist. They were packed with flavor. Reminded me of mint chocolate chip ice cream or those Andes Chocolate Mints. Delicious!!! They didn’t last long in our house!
