Delicious Baked Egg Breakfast Casserole

Baked Egg Breakfast Casserole RecipeThis baked egg casserole is easy-to-make and can be served for breakfast or brunch. Every time we have out-of-town guests staying with us…I make this casserole and it’s always a big hit. I’ve made it using a variety of different shredded cheeses, depending on what I have on-hand in my refrigerator. You can mix-n-match your favorite flavors of cheese.

Baked Egg Breakfast Casserole Recipe

1 cup shredded Cheddar cheese
6 eggs, whisked
6 slices bacon, diced
2 slices bread, cubed
1/2 red bell pepper, chopped
2 green onions, chopped
3 tablespoons milk
salt and ground black pepper to taste

Preheat oven to 375 degrees F. Lightly grease a 9″ by 13″ glass or stoneware baking dish.

In a large mixing bowl stir together the shredded cheddar cheese, whisked eggs, diced bacon, cubed bread, chopped red bell pepper, chopped green onions, and milk. You can season it with salt and ground black pepper to taste. (I typically add 3/4 teaspoon salt and a 1/4 teaspoon ground black pepper).

Pour mixture into your prepared baking dish. Place into a 375 degree F. preheated oven and bake for 15 to 20 minutes. The center of the casserole will be spongy and bounce back when touched. The top will be lightly browned. Remove from oven. Let sit in baking dish for 2-3 minutes before serving.
