This year we’ve been trying to eat healthier and have been incorporating a lot of fish and seafood into our diets. We’ve been enjoying it grilled, baked and/or pan-friend. It’s very versatile and easy to prepare. It can be the main focus on your dinner plate or used as an ingredient in something else. ie. fish & seafood tacos, fish burritos, a casserole, sandwich wrap, etc. #SitkaSalmonShares

Recently we were introduced to Sitka Salmon Shares which offers premium wild-caught seafood straight from the boat to your dinner table. How does it work? You can sign-up for monthly seafood box deliveries or just purchase what you need from their freezer section. All of the seafood is harvested in Alaska and the northern Pacific waters by local, small fishermen. It’s harvested in-season and blast-frozen, then delivered to your front door.
My delivery arrived quickly and I was really impressed with how well everything was packaged. It arrived partially frozen with dry ice. Each piece was individually packaged, labeled and sealed. In my box I received 3 packages of Wild Alaskan Lingcod Portions and 2 packages of Wild Alaskan COHO Salmon, along with 2 recipe cards & other information. Over the next few weeks I’ll be sharing info with you about the company, the fish and the recipes that I’m making. Trust me, all recipes will be quick & easy, perfect for the home cook.
Parmesan Ranch Pan-Fried Wild Alaskan Cod Recipe
1 lb. Wild Alaskan Lingcod Portions from Sitka Salmon Shares
3/4 cup Seasoned Bread Crumbs
1/4 cup Shredded Parmesan Cheese
1 oz. Ranch Dressing Mix (dry powder)
2 1/2 Tbsp. Vegetable Oil
2 Tbsp. butter, softened
Melt butter in a large skillet over medium heat.
In a measuring cup mix together the Ranch Dressing Mix with the vegetable oil. Just use a fork and kind of whisk it together. Pour liquid mixture on a rimmed plate and then dip both sides of the fillet into it, coating the sides well.
Place seasoned bread crumbs on a plate. Lightly stir in the shredded Parmesan Cheese. Dredge the fillet through the crumbs and shredded cheese mixture, coating both sides. Place into a hot skillet with melted butter. Pan fry each side for 6-9 minutes over medium heat or until fish is done. Cooking time will depend on how thick your fillet is. As it’s simmering, you may need to add additional butter to keep the fish from burning and sticking to the pan.
The fish is done when coating is golden brown and the fish flakes apart when using a fork. Remove from skillet and place onto a plate. Cut into serving pieces and serve immediately with your favorite sides.
As I previously stated, we’re big seafood & fish eaters. We love it and eat it all of the time. With that said, this piece of Wild Alaskan Lingcod was absolutely delicious! It tasted so fresh…like it was caught that day! It had a really nice texture and flavor to it. Once it was cooked it flaked easily with a fork. My husband really enjoyed this one because it didn’t taste overly fishy. The ranch dressing and Parmesan cheese really added to the flavor.
We’ve have dined out many times at high-end restaurants and this is something you would enjoy there, but now you can enjoy it in your own home and at an affordable price! You can make it the way you like it and enjoy it anytime you want. That’s how dining should be!

I love fish and seafood . I don’t like when it tastes fishy because that means it usually is not fresh. I am impressed with this recipe.
I too love seafood and this recipe sounds super good and one that I know I would enjoy. This recipe sounds nice and easy and I would love to try this company thanks for sharing.
This looks really good I don’t eat a lot of cod mostly salmon. but looking at this I need to expand my types of fish to eat

I’m enjoying all the different fish recipes you’ve been posting. I like fish.
Good! I think we have 6 more pieces of fish to try from that company. We LOVE it. Seriously, the BEST fish ever. So fresh and the portions they send are generously sized. In most cases feeds 3-5 people per portion!
We love seafood and fish too. This looks so good!
