Every year I look forward to the month of July when we harvest fresh raspberries from our raspberry patch. Its really easy to grow your own red raspberries if you have a little bit of space on your property. They don’t require much care other than a little bit of pruning & fertilizing during the fall season. Other than that…they grow well up here in the northeast.
If you like a really “sweet tasting” muffin you can add a tablespoon of honey to the batter before baking. Once fully baked you can drizzle a little bit of melted butter or honey butter over-the-top. These muffins freeze well too! Just let them cool. Then wrap each one in plastic wrap and place into a freezer bag or plastic storage container. Freeze for up to 3 months. You’ll want to thaw them in the refrigerator overnight.
Homemade Raspberry Chocolate Chip Muffins Recipe
1 3/4 cups all-purpose flour
1/3 cup granulated sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup fresh, washed, red raspberries
1/4 cup semi-sweet chocolate chips
3/4 cup milk
1 large egg
1/3 cup butter, melted
Preheat oven to 350 degrees F.
In a large mixing bowl combine the all-purpose flour, granulated sugar, baking powder and salt. Gently stir in the fresh raspberries. Stir in the milk, large egg and melted butter until all ingredients are combined. Stir in the semi-sweet chocolate chips. Do not over mix the batter, it will remain slightly lumpy.
Spoon the muffin batter into lightly greased muffin cups or cups that have been lined with paper liners. I like to fill them about 2/3 of the way full. Bake in the oven for 19 to 24 minutes or until done. Remove and place them on a wire rack to cool or enjoy them warm with a little pat of butter. YUMMY!

I always like sweets that freeze well. I love fruit and chocolate together. I would probably add more chocolate chips!
I am not much of a baker but this looks and sound so good. What I really like is that they freeze well. Nothing like take one out of the freezer a little heat and taste right out of the oven
That sounds so good. I have never used raspberries in any recipe. Strawberries are so prevalent here, we always use them.
