During the winter season I enjoy eating a wide variety of soups and stews. They fill me up and help to keep me warm on a cold winter day. I will typically make a large pot full and then share some of it with my daughter and granddaughter. Chili Con Carne is a favorite in our family and here’s the recipe that I like to use.

Slow Cooker Chili Con Carne Recipe
1 lb. lean ground beef
1 small onion, finely chopped
1 clove garlic, minced
28 oz. can diced tomatoes, undrained
15 1/2 oz. can chili beans in sauce, undrained
2 to 3 tbsp. ground chili powder
1 tsp. ground cumin
1 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. hot pepper sauce
2 tbsp. brown sugar
In a large skillet brown the ground beef, onion and minced garlic until the meat is done. Drain away the grease and fat. Pour cooked ground beef into your slow cooker and then stir in the rest of the ingredients, stirring after each ingredient addition as you go along. Cover.
Turn the slow cooker heat setting to high and cook for 30 to 45 minutes on high. Reduce heat and cook on the low setting for 4-5 hours or until done. Turn off heat and serve immediately.

My children love all kinds of chili, but not me. I could make it for them and finally use my slow cooker or instant pot.
I’ve never made chili, but this sounds so easy. We have a lot of snow coming our way in the next couple of days. This would be great for in-between shoveling.
We’re expecting cold weather next week and this would be perfect. Need just a couple of ingredients from the store.
