They make a great appetizer or snack. Many people make them in the summertime when zucchini is abundant, however we like to make them year round.

Oven Baked Parmesan Zucchini Slices Recipe

1 Large Zucchini
1-2 Medium Eggs
Seasoned Bread Crumbs
Salt and Ground Black Pepper
Parmesan Cheese, Shredded
Olive Oil

Preheat oven to 350 degrees F. Drizzle olive oil into a 9″ by 13″ glass baking dish to coat the bottom. You only need a little bit. Set aside.

Place egg into a glass measuring cup. Use wire whisk to lightly combine the yolk with the egg white.

Wash zucchini under cold running water. Slice off blossom and stem ends. Leave the peel on. Slice into 1/4″ thick rounds.

Pour 1/2″ cup or more of seasoned bread crumbs onto a plate. Add 1/4″ of shredded Parmesan cheese. Stir to combine both ingredients together. If you like more cheese you can certainly add a little bit more. Sprinkle salt and ground black pepper into the mixture and stir again.

Dip each zucchini round into the egg mixture. Dip the round into the seasoned bread crumbs to coat both sides. Place rounds into your prepared baking dish. Continue until you’re done.

Place the baking dish into a preheated 350 degrees F. oven and bake for 7-9 minutes. It doesn’t take long. They’re done when the zucchini is fork tender and the bread crumbs are a light golden brown. Remove from oven. Let cool for 1-2 minutes in the baking dish before serving.
