We enjoy traveling and often times we hit the road in our RV travel trailer. Inside we have a small kitchen with full-size refrigerator, small freezer, 4 burner stove and microwave oven. We don’t have a conventional oven but do use a toaster oven from time to time when needed. It’s the perfect set up for the two of us when out on a road trip.

I like to stock-up on the Duncan Hines Perfect Size for 1 cake and muffin mixes when we hit the road. They come in delicious flavors like: Red Velvet Cake, Blueberry Muffin, Chocolate Cake, Peanut Butter Cake, Chocolate Chip Cookie Cake, Walnut Brownie, Caramel Brownie, Cinnamon Coffee Cake, Lemon Cake, Confetti Cake, Strawberry Shortcake, Carrot Cake, etc. We’ve tried many of them and love them!
The Red Velvet Cake Mix is one of my husband’s favorites! The package contains 4-pouches and the only ingredient you need to add is 3 tablespoons of apple juice. If you don’t have apple juice…water will work fine too. You dump the pouch of dry ingredients into a large microwave-safe mug. Add the apple juice, stir until blended. Place the mug into your microwave and cook on the high setting for 1 minute and 10 seconds. Take it out and let it sit for 2 additional minutes. Enjoy!
As you can see…they’re the perfect treat for those who travel as most hotel and motel rooms have microwave ovens! Great for using in the RV too. If you’re empty nesters like us and don’t want to bake an entire cake, batch of cookies, brownies or muffins…this is definitely the way to go.
They’re pretty flavorful and in my honest opinion…you would never have guessed it was baked in a microwave oven! You can add you own toppings (if desired) and we highly recommend trying a few of them with a dish of vanilla bean ice cream. Delicious!
You can find the Duncan Hines Cake and Muffin Mug Mixes at most grocery stores and you can purchase them from Amazon too. I think they’re great little mixes to keep on hand.

I have never tried these, and I do sometimes have cravings for something sweet. This would be perfect on those occasions.
