Pumpkin Spice Bread Recipe
During the holiday season one of my favorite sweet breads to give as a foodie gift is Pumpkin Spice. It’s easy-to-make and loved by everyone. Plus, you can make your loaves up ahead of time and freeze them for gift-giving. They’ll keep for up to 3 months in your freezer. This recipe will make 2 standard size loaves. You can also pour the batter into mini loaf pans if you prefer.
Pumpkin Spice Bread Recipe
2 cups granulated sugar
1 cup brown sugar
4 eggs, lightly beaten
1 (16 ounce) can pumpkin puree
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1 teaspoon ground allspice
1/2 cup water
Preheat oven to 350 degrees F. Grease two 9-inch loaf pans.
In a large mixing bowl mix together the granulated sugar, brown sugar, and eggs; stir in pumpkin puree and mix well. Combine the all-purpose flour, baking soda, salt, cinnamon, nutmeg, baking powder, cloves, and allspice in a bowl; add alternately with water to pumpkin puree mixture. Pour into greased loaf pans.
Bake in preheated 350 degree F. oven until a toothpick inserted into the center comes out clean, 60 to 65 minutes. Cool in pans for 10 minutes before removing to cool completely on a wire rack.
To Freeze: Let cool completely. Wrap in 2 layers of plastic wrap and then 2 layers of aluminum foil. Label and freeze. If you don’t want to use aluminum foil you can slide your wrapped loaf into a plastic freezer bag. Label and freeze.
