Gluten Free Peanut Butter Cookies with Colored Sugar
No holiday would be complete without a few batches of homemade peanut butter cookies. Every year I make the classic ones, peanut butter blossoms with a Hershey Kiss on top and these very easy-to-make gluten free cookies with colored sugar sprinkled on top.

If you prefer more colored sugar on top please feel free to increase those amounts in the recipe. These cookies do freeze well so you can bake them ahead of time and freeze them for up to 3 months once cooled. Thaw at room temperature.
Gluten Free Peanut Butter Cookies with Colored Sugar Recipe
1 cup creamy natural peanut butter
1 large egg
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking soda
1/4 cup green colored sugar
1/4 cup red colored sugar
non-stick baking spray
Preheat oven to 350 degrees. Spray baking sheet with non-stick baking spray. If you don’t want to use the non-stick baking spray line your baking sheet with a silicone baking mat to prevent sticking.
In a large bowl combine together the creamy natural peanut butter, large egg, brown sugar, granulated sugar and baking soda.
Pour colored sugars onto a disposable foam plate or in a shallow bowl.
Form cookie dough into a ball no larger than 2″ in diameter. Roll ball in the colored sugars. Place on baking sheet and flatten slightly with the back of a spoon. Continue until all cookies are done and on the sheet.
Bake in a preheated 350 degree F. oven for 7-8 minutes. Remove from oven. Transfer cookies to a wire rack to cool.
