Slow Cooker Pork and Sauerkraut Recipe
The slow cooker is one of my most valuable kitchen appliances. I use it at least three times every week to make lunch, dinner, baked goods or dessert. During the late spring and summer months I find myself using it even more. I really dislike heating up the kitchen with the oven on a HOT and HUMID day. It’s the perfect appliance…prepare your meal in the morning and when you get home later on dinner is done!

Our local grocery store runs a manager’s special on pork roasts every 3-4 months. They will put it on sale where you buy two and get one free. I like to stock up when they run the Manager’s sale! You can use pork roasts to make this recipe, to make pulled-pork sandwiches, pork burritos & fajitas, and all sorts of other things. It’s versatile once you know how to use it.
Slow Cooker Pork and Sauerkraut Recipe
1 lb. pork tenderloin
18 to 20 oz. bag sauerkraut
1 cup water
1/3 cup butter
salt and ground black pepper (to taste)
1 tbsp. dried parsley
Place the pork tenderloin in your slow cooker. Pour the water on top along with the juice from the bag of sauerkraut. Add the butter, salt, ground black pepper and dried parsley. Use a spoon to mix things together. Pour the bag of sauerkraut on top, using the spoon to mix things around. If needed, you may have to add additional water depending on the size of your pork roast. Place the lid on top.
Set the heat setting to low and slow cook for 6-8 hours or turn the heat setting to high for the first 2 hours and then down to low for an additional 3-4 hours. Remove lid. Use a large fork to cut the meat apart. If its done it should easily fall apart. Stir everything together. Place lid back on and cook for an additional 30-45 minutes to allow all of the juice to get through all of the shredded meat.
Serving Suggestion: We like our pork and sauerkraut served on top of mashed potatoes for day one. We always have leftovers and for the following day we will reheat it back up in the microwave and serve it over-the-top of a baked potato. Just to make it a little different on day two.
