The Vegg Cookbook and Vegan Egg-FREE Substitutes

The Vegg was originally created for the vegan market, it appeals to a broad range of customers, is great for health-conscious consumers as well as those with egg allergies. It is distributed worldwide. The Vegg offers four products that are all 100% plant-based egg substitutes.

The Vegg Egg-Free Substitute

* Vegg Yolk Mix is the company’s signature product. Add water and it replicates the taste and texture of an egg yolk.

* The Vegg Scramble Mix, packed with protein, is meant to replace a regular egg and is a stand-alone product.

* The Vegg Baking Mix, which sold out during the early part of the shutdown, is used as a binding agent in baking.

* The Vegg French Toast Mix, makes the fluffiest French Toast with fat-free and cholesterol-free plant-based egg substitute that is high in Vitamin A and B12.

There’s even a Vegg cookbook packed with 80 pages of great-tasting vegan recipes.

Last week I spent 8 days at my daughter Shelly’s home to help her out with some projects. While there this package containing the Vegg products arrived. I’m not a vegan and I don’t eat a lot of meat or animal products.  I try to eat healthy but I’m not a fanatic about it. I tend to make and eat the things that I like.

Let’s first start with the Vegg Cookbook. It contains 80 pages of vegan recipes that utilize the Vegg products. It’s contains recipes that are suitable for breakfast, main dish dinners and desserts. Here’s an example of a few recipes: Lemon Poppyseed Pancakes, Vegg Omelet, Tangerine French Toast, Veggy Burger, Homemade Vegg Pasta, Eggless Salad, Broccoli Quiche, Vegg Carbonara, Date Nut Bread, Creme Brulee, Vegg Nog Pie, Gluten-Free Lemon Bars, Sunflower Seed Chocolate Cookies, etc.

In the beginning of the book is a page on how to Spherify a yolk. If you want to use the Vegg product to make fried eggs for breakfast and have it look like a traditional fried egg you’ll want to follow the directions in the book. Who knew? I found that totally fascinating.

Sugar Cookies

I decided to use the Vegg Uncaged Baking Mix to make two batches of cookies. There’s a recipe printed on the back of the package (a basic cookie recipe) or read the instructions on the package to use the product in your favorite cookie recipe. For example: for 1 egg you’ll combine 1 tsp. of mix with 1/2 tsp. of sugar and then whisk with 1/4 cup cold water. You’ll let it sit while you gather your other ingredients. Both of the recipes I made called for 2 eggs, so I doubled it each time.

Chocolate Chip Cookies

Shelly loves homemade chocolate chip cookies so I made a batch of cookies for her. My two great-grandchildren like sugar cookies, so that’s the second batch that I made. Both recipes called for 2 eggs, so I substituted with the Vegg Uncaged Baking Mix as explain above. I found that they mixed into the batter easily which was nice. The package states I might see added baking time which I didn’t. I was really impressed with how easy the product was to use and you noticed no difference in taste with the cookies. No one knew (except Shelly) that I used the Vegg product instead of traditional eggs.

The Vegg Power Scramble mix is very easy to use. On the back of the package you’ll find instructions on how to make scrambled veggs using your microwave or via the stove-top method. Basically you’ll measure out the mix, add a little water and a dash of salt. Pour into your greased skillet and fry it up like your traditional scrambled eggs. I used the stove-top mixture and it took a little bit longer to make them. They looked just like your traditional scrambled eggs. They tasted similar, but not exact. It could be that I knew I was using a substitute. If I hadn’t known I might not of been able to tell.

The Vegg Power Scramble

I haven’t had a chance yet to use the Vegg Vegan Egg Yolk mix but I’m sure I will. I just haven’t done a lot of baking the past 3 weeks due to the hot & humid temperature we’ve had in the northeast. Now that fall is rolling around and baking season will be upon us, I’m sure I’ll be using it a lot.
