Cucumber Slices Topped with Cheese and Cherry Tomatoes
Hubby and I have been trying to eat healthier the past 2 months and last month we started making these delicious cucumber slices topped with cheese and cherry tomatoes. We’ve had a great crop of cucumbers and tomatoes from our backyard garden this year, and this was an easy way to use some of those up!

Cucumber Slices Topped with Cheese and Cherry Tomatoes
Cucumber
12 Cherry Tomatoes
The Laughing Cow Spreadable Cheese (reduced fat variety)
Plastic Wrap
Wash cucumber. Cut into 1/8″ thick slices. If it’s overly-wet you can use a paper towel to blot off some of the excess moisture. Lay slices out onto a plate or serving tray.
Use a butter knife to spread The Laughing Cow Spreadable Cheese on each slice. You can use a little or a lot, according to your own taste buds.
Wash cherry tomatoes under running water. Slice them in half and rinse out the seeds under running water. Blot off excess water with a paper towel. Place a half with the cut-side down on top of the cheese spread. Cover plate or serving tray with plastic wrap.
Place into the refrigerator for 1-2 hours to allow everything to chill. Remove. Serve.
These cucumber slices are delicious! My 11 year old granddaughter loves them and made the batch you see in my photograph. A healthy snack that even kids can make and enjoy! I think they would be fabulous served as a grab-n-go appetizer at a family picnic or backyard barbecue too.
