Looking for a way to use up some of that zucchini from your garden? This recipe only requires a handful of ingredients and is really easy-to-make. They’re best served right out of the oven or reheated to a warm temperature. If Italian cheese isn’t your thing…you can use whatever type of cheese you like or whatever is in your refrigerator. They taste equally delicious when made with cheddar, American, or Parmesan cheese.

Variations: You can place cooked, crumbled bacon on top, real bacon bits (not imitation) or slice a red cherry tomato in half and place a half on top (flat side down) and then sprinkle the dried oregano on top. If you like garlic…mince up a little garlic and place that directly onto your slice of zucchini before topping with shredded cheese.
Baked Cheesy Italian Zucchini Bites
1 small zucchini
olive oil
shredded Italian cheese blend
salt and black pepper (to taste)
dried oregano
Preheat oven to 350 degrees F.
Line a baking sheet with aluminum foil. Drizzle a tad of olive oil onto the aluminum foil. Use a paper towel to spread it around. This will help to prevent the slices from sticking to the foil and baking sheet.
Slice zucchini into 1/4″ thick slices and place them onto the prepared baking sheet. Lightly drizzle a tad of olive oil on top of each slice. I like to use the back of a spoon to evenly coat the slice. Continue until you have your sheet loaded up with slices (all in a single layer). Sprinkle a tad of salt and ground black pepper onto them. Place shredded Italian cheese on top. You can add a little or a lot, entirely up to you.
Bake in a preheated 350 degree F oven for approximately 7-9 minutes or until the slices are fork tender and the cheese has melted. Remove. Let cool for 3-4 minutes before serving. They’re best served warm.
You can store leftovers in your refrigerator in an airtight container. When you want to snack on them place a few of the zucchini bites on a microwave safe plate and reheat for 10-15 seconds. Delicious!

This looks super easy. I stir fry the pieces but I think I would like this better.
I eat a lot of raw zucchini but this really sounds easy simple and quick. Going to the farmers market this afternoon and will have to pick up some more…………

I have been hooked on zucchini lately. I mean I just can not get enough of it just got some more the other day. I have been frying it with egg and flower – I know not healthy but super yummy.
