Cucumber Tomato Salad is easy-to-make and a great way to use up fresh cucumbers, tomatoes and onions from your garden. You only need a few ingredients to make it, 2 hours of chilling time and it’s ready to serve. Perfect for snacking or take to a family picnic.

Garden Fresh Cucumber Tomato Salad Recipe
1 large Cucumber
1 large Tomato
2 Tbsp. Onion, finely chopped
1 cup Reduced-Fat Mayonnaise
1/4 cup Granulated Sugar
2 tsp. White Vinegar
1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 tsp. dried dill
Wash cumber. Peel off skin and cut into slices. Wash tomato, cut into quarters, rinse out seeds under running tap water. Chop into bite-size pieces. Finely chop onion. Place into a serving bowl
In a small mixing bowl mix up the dressing: reduced-fat mayonnaise, granulated sugar, white vinegar, salt, ground black pepper and dried dill. Once combined pour dressing into the first bowl. Use a spoon to mix up everything up until dressing is well distributed and coating everything nicely. Cover bowl. Refrigerate for 2 hours to allow flavors to infuse.
