Over the past few years we’ve featured several of the delicious Garden Lites products here on the Two Classy Chics blog. We absolutely love their line of veggie-rich muffins and waffles. You’ll find those in my freezer all of the time.

For this review I received a complimentary package of Garden Lites Veggie Bacon & Potato Frittata made with Cheddar Cheese. Each package contains 6 Frittatas and each serving (1 Frittata) is only 80 calories. Great for those of us who are watching our weight. This product is vegetarian and gluten free. The veggie bacon was made with pinto beans.

You keep them stored in your freezer until you’re ready to use them. All of them are individually wrapped, so you can remove one, two, etc. at a time. They can be prepared with one of two different methods.

Veggie Bacon and Potato Frittata by Garden Lites

Oven/Toaster Oven: Pre-heat oven to 350 degrees. Remove Frittata(s) from all packaging. Place Frittatas on a baking sheet and heat for approximately 18 minutes.

Microwave: Heat in bag on high for approximately 45 seconds. Carefully remove from microwave, the bag will be hot.

I live alone and don’t do a lot of cooking or baking unless I’m staying down at my daughter’s house. I regularly look for products that are packaged in smaller portions or individually wrapped like these Frittatas.

The Veggie Bacon & Potato Frittatas are easy-to-make and take less than 1 minute when preparing using the microwave oven. I let them cool for about 2 minutes. One Frittata along with a glass of fruit juice in the morning is enough to get my day going. If you’re a bigger eater, I would recommend making two at a time.

They’re moist and flavorful. You can taste the cheddar cheese (just enough cheese) and I really liked the veggie bacon. I wasn’t sure at first if I would like pinto beans bacon but it really tastes good. You can barely tell that its a veggie bacon. The texture is nice too. They’re not rubbery, hard or crunchy. I found them to be very good. I had the entire box of 6 Frittatas gone within 10 days!
