The book is packed with recipes for every meal and beyond, but it also provides the solid background information we need as we shift toward more healthful eating habits. The introductory section, Good Food for Good Health, states that “The goal of Everyday Healthy cooking is to offer super-powered meals with an abundance of macro- and micronutrients, helping you create your own daily menus and giving your healthy eating exciting and appealing variety.” Reading through this section, you’ll gain an understanding of the essential ingredients for healthy cooking—vegetables, fruits, grains, fermented foods, herbs, spices, and oils, as well as meats, poultry, seafood, dairy, and vegetarian protein sources.
The lessons in healthy eating continue with each featured recipe’s header, which highlights the benefits of certain ingredients or suggests variations to suit your personal tastes or dietary preferences. For example, the recipe for Penne with Walnut Pesto & Peas begins: “Walnuts contain twice as many immune-boosting antioxidants than any other nut. Replace the usual pine nuts in pesto with walnuts to take full advantage of their benefits in a delicious way!” Such a simple and helpful explanation definitely inspires me to break out my food processor and get busy.
The Everyday Healthy Cookbook makes it easy to employ this information about healthful foods by providing amazing recipes to get us cooking.
Here’s a sampling, broken down by chapter:
* Starters & Soups: Spinach & Feta Dip with Horseradish; Watermelon Gazpacho
* Salads: Cucumber Salad with Miso Dressing; White Bean, Tuna & Fennel Salad
* Pasta & Grains: Wild Rice & Mushroom Pilaf; Barley with Kale & Lemon
* Main Dishes: Roasted Salmon with Thyme Vinaigrette; Chicken Tostadas with Radish Slaw
* Sides: Smashed Potatoes with Paprika Salt; Edamame, Corn & Sweet Onion Succotash
* Breakfast & Brunch: Baked Avocado Eggs; Peaches & Cream Breakfast Parfait
* Dessert & Drinks: Apple-Cranberry Crumble; Double Rich Hot Chocolate
It was hard to choose just two recipes from each chapter to share! But there’s even more, with a whole chapter devoted to Basic Recipes that includes instructions for cooking different types of rice and grains, then continues with recipes for Pizza Dough, Hummus, Stove-Top Herbed Polenta, and many other staples. And the final chapter, The Healthy Ingredient Glossary, is a detailed listing of ingredients and why they’re part of a healthy diet.
If you’re interested in preparing a wide variety of healthy and delicious foods for yourself, your family, and your guests, the Everyday Healthy Cookbook will prove to be an indispensable guide.
