To help the many Instant Pot® fans looking for fun new ways to use their favorite appliance, the Williams-Sonoma Test Kitchen has recently authored a new cookbook to expand our pressure-cooking repertoire to include desserts, too. It’s The Instant Pot® Desserts Cookbook (Weldon Owen, May 2020), and it’s a total game-changer!

This cookbook has made me a dessert hero, starting with a birthday cake for my husband using the recipe for Carrot Cake with Cream Cheese Frosting. Not only was it easy to make, but he declared it to be one of the best carrot cakes he’s ever had! And I loved not having to use my oven on an 85-degree day when the air conditioning was on. If anything else I make from this book is only half as successful, I’ll be very happy (but I have no doubt that everything else will be equally as good).
The Instant Pot® Desserts Cookbook is officially endorsed by the Instant Pot® brand, but I feel I should let you know that my pressure cooker is a different brand. That wasn’t a problem in making the carrot cake, though. In fact, the only functions needed for the recipes are high-pressure cooking (called “Manual” on older Instant Pot® models) and the Sauté function, both of which should be common to all modern electric pressure cookers.
You’ll need a few specific tools to make the recipes in the book, the most common being a 7-inch springform pan along with a trivet and a steam rack with handles (or a homemade sling). Other tools include 4-ounce ramekins, a 6-cup Bundt pan, and half-pint canning jars with lids. None of these should be difficult to find, and the slight investment will be well worth it when you start churning out delicious desserts.
The variety in The Instant Pot® Desserts Cookbook is amazing, from homey quick breads and cobblers to company-worthy Bundt cakes and cheesecakes to yummy sauces and toppings. Truth: If I marked all of the recipes I want to try, every single page would be dog-eared. LOL! Check out these beauties:
