The Indoor Grilling Cookbook from Williams-Sonoma
Indoor grilling has always had a place in my kitchen, and now with the help of a brand-new book from the Williams-Sonoma Test Kitchen, I can take it to a whole new level. The Indoor Grilling Cookbook (Weldon Owen, May 2020) is full of recipes and techniques for grilling great food indoors using both countertop electric grills and stove-top grill pans.

Like other books in the Williams-Sonoma cookbook series, The Indoor Grilling Cookbook focuses on a single subject, in this case, making the most of our indoor grills. Although it’s a slim volume at 62 pages, its wide variety of recipes provides enough inspiration to have you grilling everything from veggies for side dishes or salads, to meat, poultry, and seafood entrees, to fruits for desserts. And since it’s from Williams-Sonoma, you know that the information is trustworthy and the well-tested recipes are reliable and sure to be delicious. Armed with your favorite indoor grill and The Indoor Grilling Cookbook, you’ll be preparing delectable grilled foods regardless of the season or the weather.
The introductory sections of the book provide great information to get you grilling indoors, including a discussion of the benefits of indoor grilling and a breakdown of the features of the two main types of indoor grills (smokeless electric grills and stove-top grills), followed by kitchen wisdom in the form of Tips for Indoor Grilling. After that, all you need is some fresh ingredients and you’ll be ready to get started with the recipes!
I love my stove-top grill pan, but I only use it for standard things like hamburgers, steaks, and chicken breasts. After reading through The Indoor Grilling Cookbook, I realize that there’s much more I can be grilling indoors. The first thing I plan to make is a whole chicken, following the recipe for Spatchcocked Chicken with Herb Butter & Grilled Garlic Heads. Here are a few more recipes I find particularly appealing:

• Grilled Summer Squash with Goat Cheese, Hazelnuts & Mint
• Spiced Chicken Kebabs with Grilled Plantains & Mango-Lime Salsa

• Grilled Porterhouse Steak & Balsamic Onions with Fresh Thyme
• Maple-Spiced Grilled Apples with Sea Salt

Anytime I get the chance to go to a Williams-Sonoma store, I’m captivated by all the fabulous kitchenware, but I always end up in front of the cookbook display. The same is true when I visit their website, where I browse and dream of all the wonderful foods I could cook.
