We recently had the opportunity to try out the Mediterranean Quinoa Blend with Cherry Tomato, Spinach & Basil that’s finished with just a touch of olive oil and garlic. You keep it stored in your freezer until you’re ready to prepare it. Serving size is 1 1/4 cups with about 2 servings per package.
Microwave:
Gently massage package to break apart the frozen contents. Place unopened bag in microwave. Do not pierce bag. Cook on high for 5 minutes. Microwave cooking times may vary. Caution: Product will be hot.
Stove-Top Skillet:
Gently massage package to break apart the frozen contents. Heat in a nonstick skillet over high heat for 1 minute. Add 1 tablespoon of water and product to skillet. Stir. Cover and reduce to medium heat. Cook for 5 minutes, stirring occasionally.
We opted to prepare the Mediterranean Quinoa Blend with Cherry Tomato, Spinach and Basil in our microwave following the directions printed on the package. It took 5 minutes in the microwave and another 3 minutes of cooling time. We served it along side pork chops and corn on the cob.
One of the things that really impressed us was that it was moist. It wasn’t all dried out and crusty. Second…it had the perfect blend of flavors and you could taste them all. None over-powered the other. Again, the perfect blend. The package states about 2-servings per package but we found that serving it as a side dish (as stated above) we got 4-servings out of it. I feel that’s important to know if you’re a family of 4 and looking to serve it like we did.

I love this combination of flavors and am going to look for it in the supermarket. I do not eat quinoa very often and hope that I will enjoy it in this type of recipe.
This would make a tasty side dish for grilled chicken or fish which is something that I prepare often. Hope I get some fresh basil from my garden this year to add to dishes like this.
I like all the flavors in this. Very easy to fix and serve.
I have not had this in years and it is so perfect for this time of year. I am so writing this down right now on my shopping list thank you for sharing this one. I so need to eat healthier and this is a great start this summer.
