Quick and Easy Tuna Pasta Salad
Once or twice a month I will whip up a pasta salad for my family to enjoy. I use no set recipe when I make them….and they’re thrown together with leftovers and whatever I currently have on hand. If you’re not a fan of tuna fish…you can use chopped chicken, turkey or completely omit it all together.

I will often toss it together in between grocery store runs or when I need to get things cleared out of my refrigerator. You can toss in all kinds of different chopped vegetables and even some fruits work well too!
As I previously stated…I often don’t use a recipe and whip together whatever I have on hand. Here’s what went into this particular Tuna Pasta Salad.
Quick and Easy Tuna Pasta Salad Recipe
2 cups cooked, drained, cooled bow-tie pasta
1 can tuna, drained, rinsed and shredded
1/2 small onion, finely chopped
1/2 medium cucumber, peeled and diced
3 hard-boiled eggs, chopped
8 cherry tomatoes, sliced in half, seeds rinsed
reduced-fat mayonnaise
1/2 teaspoon dried Italian Seasoning Spice Mix
salt and ground black pepper to taste
1/2 tsp. dill pickle juice
granulated sugar to taste
When it comes to mixing things together I start with the bow-tie pasta, reduced fat mayonnaise, tuna fish and the granulated sugar to taste. Once I have that portion the way I like it…I start tossing in the other items from my refrigerator. You can add more or less…whatever you have on hand that needs to be used up. Sometimes I’ll toss in sliced grapes or cranberries if I have those on hand. My mom enjoys it from time to time with plump & juicy raisins tossed into it.
Once you have everything mixed together and seasoned to taste you’ll want to put a lid on your bowl and refrigerate it for 2 hours to allow the flavors to infuse. Then serve once chilled. YUMMY and a great way to clear out those odds and ends from the refrigerator!
