I’m a busy mom and I’m always on-the-go. When I’m out and about I like to carry around a little snack to hold me over until meal time. I enjoy eating trail mixes and enjoy switching up the flavors to keep things interesting. After all, who wants to eat the same thing over and over again? Not me!
Today’s guest post recipe is courtesy of Popcorn.org and is a unique twist on the traditional homemade trail mix recipe. It utilizes popcorn, two different type’s of nuts, dried fruit and chocolate for the added sweetness. The recipe will make approximately 12 cups.
Popcorn and Goji Berry Trail Mix
1 cup each unsalted almonds and cashews
8 cups unsalted, unbuttered popped popcorn
2 tbsp butter
2 tbsp honey
1/3 cup chopped dark chocolate or dark chocolate chips
1/2 tsp salt
1 cup chopped dried apples
1/2 cup dried goji berries
Preheat oven to 300°F.
Toast almonds and cashews on large, rimmed baking sheet for 10 minutes; let cool. Line same baking sheet with parchment paper; spread popcorn onto baking sheet.
In small saucepan set over medium heat, melt butter, honey, dark chocolate and salt, stirring until smooth. Drizzle over popcorn; toss gently.Bake, stirring occasionally, for 25 to 30 minutes or until popcorn is dry; let cool.
Toss popcorn mixture with almonds, cashews, apples and goji berries. Store mixture in an airtight container.

This is a different recipe. for trail mix. I think that I would love this recipe, although I would add more dark chocolate.
The weather is improving so time for some hikes and this would be a nice snack to have along the way. I sure like the choice of ingredients to go along with the popcorn especially the cashews.and almonds.
I’ve never tried goji berries but this sounds good. I need to give this a try. You’re right, you need to mix it up and try something different sometimes.

My mother would not like this because she is MUST EAT POPCORN WHEN HOT person. Me this is just something I would love to have around the house. I will make and bag this up in individual servings
