Do you enjoy eating popcorn but get tired of the same old, same old thing? Looking to mix up your popcorn eating routine with a delicious grab-n-go snack? The Apricot Cherry Popcorn Squares are easy-to-make and offer a delicious alternative to a cereal bar. The recipe is courtesy of Popcorn.org and will make approximately 12 servings. I think they would be great to make for bake sales as they’re something totally different and unique. I bet they would be a big seller!
Apricot Cherry Popcorn Squares Recipe
10 cups air-popped popcorn
3/4 cup dried cherries
3/4 cup sugar
1/2 cup + 2 tbsp. water
1/2 cup sugar-free apricot preserves
1/4 cup light corn syrup
1/2 teaspoon lemon juice
Combine popcorn and cherries in large bowl.
Combine sugar, water, preserves, corn syrup, and lemon juice in a small saucepan; bring to a boil and cook, stirring constantly, until sugar dissolves. Cook until mixture forms thick, “ropy” threads that drip from the spoon. Pour slowly over popped popcorn and mix thoroughly.
Spray 9 x 13-inch baking dish with cooking spray. Press mixture into baking dish and cool completely. Cut into equal-sized squares and store in an airtight container or wrap each one individually for grab-n-go snacks.

I love this recipe. I think that the combination of cherries and apricots is delicious.
I think you’re right about these being a big hit at bake sales. So different from the usual items.
I think combining popcorn with fruit would taste really good. I might switch the apricot for peach preserves just because I’m not a big fan of apricots. Really, you could use any fruit you liked, I guess.
