Old-Fashioned Macaroni and Cheese
You’ll need these ingredients for this mac and cheese:
1 can (12 ounces) of skim evaporated milk
2 cups of cooked elbow macaroni
1 and 1/2 cups of nonfat milk
1/3 cup of egg substitute
1 T of melted butter
2 cups of shredded sharp cheddar cheese
8 ounces of Velveeta cheese, cubed
In a big bowl, mix the milk, egg substitute, and evaporated milk. Next, stir in the macaroni, Velveeta cheese, and one and a half cups of cheddar cheese.
Coat your slow cooker with cooking spray. Move the mixture to the cooker and cook for two to three hours on low. Sprinkle with the remaining cheddar cheese and ground pepper.
Lasagna
You’ll need these ingredients for this delicious dish:
3/4 pounds of Italian turkey sausage links with the casings removed
3/4 pounds of lean ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 jar of spaghetti sauce (26 ounces)
1 cup of 1% cottage cheese
1 egg, beaten
1 package of low-fat cream cheese, cubed
6 whole wheat lasagna noodles, cooked
1 tablespoon of fresh parsley
1 cup of shredded skim mozzarella cheese
1 cup of shredded low-fat Italian cheese blend
3 teaspoons of Italian seasoning
Set aside a 13×9 baking dish that’s coated with cooking spray. Preheat your oven to 350 degrees.
On medium heat, cook the sausage, beef, green pepper, and onion in a large skillet. Cook until the meat isn’t pink and then drain the pan.
Put aside one cup of your spaghetti sauce and place the rest in the meat mixture. Bring the meat sauce to a boil. Reduce the heat and simmer for up to ten minutes or until the mixture has thickened.
In a smaller saucepan, melt the cream cheese over medium to low heat. Remove the pan from the heat. Stir in the parsley, egg, and cottage cheese.
Spread the meat sauce into your baking dish. Layer three noodles, the cream cheese mix, and the Italian blend. Sprinkle a teaspoon of the Italian seasoning.
Repeat this step. Layer the top of lasagna with the rest of the noodles and remaining spaghetti sauce. Sprinkle on the leftover Italian seasoning and mozzarella.
Cover your lasagna and bake for 35 minutes. Uncover the lasagna and cook for another 15 minutes or until it starts to bubble.
Healthy Deviled Eggs
For this delicious recipe, use these ingredients:
1/4 cup of fat-free mayo
8 boiled eggs
2 tablespoons of soft bread crumbs
1/4 cup of fat-free sour cream
1 tablespoon of prepared mustard
Salt and pepper to taste
4 sliced pimento-stuffed olives
Paprika, optional
Slice all your boiled eggs in half, lengthwise. Remove the yolks and refrigerate eight of them to use in another recipe.
In a small bowl, mash the leftover yolks. Stir in the bread crumbs, mustard, mayo, and sour cream.
Sprinkle in salt and pepper. Stuff the egg whites with this mixture. Garnish with olives and dash them with paprika.
