This year we’ll be spending a lot of time outdoors hiking, fishing and camping. If you’re an outdoor’s type of person you’re always looking for shelf-stable, grab-n-go snacks like the Maca Almond Popcorn Bars that we’re feature on the blog. The recipe is courtesy of the great folks over at Popcorn.org where you can find a ton of free recipes that you’ll enjoy. This recipe will yield approximately 16 bars and they’re a great source of fiber and protein.
Maca Almond Popcorn Bars Recipe
8 cups unsalted, unbuttered popped popcorn
3/4 cup sliced almonds
1/2 cup flaked oats
1/3 cup almond butter
1/3 cup brown rice syrup
3 tbsp honey
1/2 tsp salt
2 tsp maca root powder
Preheat oven to 350°F. Line 8-inch square baking pan with parchment paper.
Place popcorn in large mixing bowl. Spread almonds and oats on baking sheet; bake for about 5 minutes or until lightly browned and toasted. Let cool completely; add to bowl with popcorn. In saucepan set over medium heat, combine almond butter, brown rice syrup, honey and salt. Stir in maca root powder until smooth and dissolved.
In large mixing bowl, pour almond butter mixture over popcorn mixture; toss gently to coat evenly. Transfer mixture to prepared baking pan, patting down and spreading to edges. Let cool until firm. Cut into bars. Store bars in an airtight container or little food storage bags.

I have never heard of Maca powder and I love the idea of using both almond butter and almonds with popcorn.
These sounds yummy and healthy! They would make a great and quick pick me up snack.
