Loaded with Everything Cheesy NachosHow many of you enjoy eating Nachos? We eat them every 2-3 weeks when we need to clean out our refrigerator. Why you might ask? Because we can load them up with leftovers that need to be eaten up! Since our leftovers are always changing we never get bored eating them!

If you have leftover ground beef, ground turkey or shredded chicken just heat it up in a skillet with some McCormick Taco Seasoning Mix. While it’s simmering on low I get busy whipping up our nachos.

You can use leftover refried beans, chili (kidney) beans, bell peppers, hot peppers, diced cucumbers (peel removed), chopped tomatoes, diced onions, sliced mushrooms, shredded lettuce, sliced olives (black or green), etc. Great way to use up those leftover salad ingredients.

After you have your veggies all together you’ll need to add some flavorful toppings like a few spoonfuls of salsa, hot sauce, guacamole, chile con queso, melted cheese, sour cream, hummus, or whatever you like. Don’t be afraid to combine several toppings on one pile of yummy veggies and tortilla chips.

We enjoy making nachos pretty often and are always varying up the ingredients that we use. During the summertime when our garden is kicking out a ton of fresh veggies…we eat them even more!
