I admit…I’m a big bread eater. I enjoy eating all kinds of different breads. I can eat them plain, smothered in melted honey butter, butter or slices dipped in flavored dipping oils. Bread is one of those foods that I wish I could eat at every meal, every day.

The great folks over at Popcorn.org asked us to share this different and unique bread recipe with our blog readers. Its a twist on the traditional homemade corn bread. Here’s the recipe.
Cheesy Popcorn Bread Recipe
4 cups popped popcorn
1 cup yellow corn meal
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup 2% milk
1/4 cup vegetable oil
1 cup shredded jack or pepper jack cheese
1 (4 ounce) can mild, diced green chilies, drained, optional
Preheat oven to 400º F. Spray an 8-inch square baking pan with cooking spray; set aside.
Process the popcorn in a blender or food processor until finely ground. Pour ground popcorn into a large bowl and stir in corn meal, sugar, baking powder and salt until blended.
Beat egg, milk and vegetable oil together in a small bowl and stir into popcorn mixture just until blended. Scatter cheese and chilies, if desired, over batter and stir just until evenly distributed.
Pour batter into prepared pan and bake for 25 minutes or until lightly browned at edges and tester comes out clean. Cut into squares to serve.

This is a different recipe for cornbread. I would like to try it by myself before I decide if I want to make it for my family.
This looks like a cornbread recipe, and I love cornbread. I never thought of adding popcorn, but I’d give it a try.

This is a very unique idea. I was wondering also how the popcorn was going to be used in this. Sounds delicious!
Like Sarah, I thought it would be bread with pockets of popcorn all thru it. This is totally different. I have never thought of processing popcorn into something that would be an ingredient in another dish. i will have to try this. Thank you for the idea.
When I read the title I imagined bread with popcorn in it, not processed like the recipe says. Should give it an interesting texture.
