Lemon Chocolate Chip Muffins Recipe
Lemon and chocolate are one of my favorite flavor combinations when it comes to homemade baked goods and desserts. Its a balancing act on getting it just right, but when you do…it’s a flavor combination that’s out-of-this-world good!

A few years ago a friend of mine gave me her Lemon Chocolate Chip Muffins recipe and I tweaked it a little bit to suit my own needs. I like a moderate to strong lemon flavor, but you can certainly add less lemon juice. The recipe will make approximately 12 muffins. You can easily double-up the recipe of you’re baking for a crowd.
Lemon Chocolate Chip Muffins Recipe
2 cups all-purpose flour
1 1/4 cups granulated sugar, divided
2 tsp. baking powder
2 medium eggs
3/4 cup milk
1/2 cup butter, melted
2 1/2 tsp. lemon zest, grated
1/4 cup fresh lemon juice
1/2 cup semi-sweet chocolate chips
Preheat oven to 350 degrees F. Lightly spray a muffin pan with non-stick baking spray or paper muffin liners. Set aside.
In a large mixing bowl combine together the all-purpose flour, 1 cup of the granulated sugar and the baking powder. Set aside.
In a large mixing bowl combine together the medium eggs, milk, melted butter, grated lemon zest and the lemon juice until all ingredients are combined together. Pour the flour mixture into the wet ingredients, stirring until all ingredients are well combined together. Gently fold-in the chocolate chips.
Spoon the muffin batter into your prepared baking pan. Sprinkle the remaining granulated sugar over the top of each muffin. If you’re watching your weight or sugar intake…you can skip this part.
Bake in a preheated oven for 22-26 minutes or until the tops are lightly golden and the center of each muffin has set. Remove pan from oven. Place muffins on a cooling rack and let them cool to room temperature.
Storage: I like to personally store mine in an airtight container in my refrigerator (during the summertime) or in an airtight container on my counter-top during cooler weather. These muffins do freeze well. Just wrap and place into the freezer for up to 3 months.
