Blueberry Lemon Chex Muddy Buddies Recipe

A few weeks ago I purchased a box of Chex Blueberry Flavored Cereal and on the back of the box they had a recipe for the Blueberry Lemon Chex Muddy Buddies. If you like the original recipe I think you’ll love this new version too. The recipe below is courtesy of Chex and came directly from the cereal box.

Blueberry Lemon Chex Muddy Buddies Recipe

9 cups (1 box) Chex Blueberry Flavored Cereal
1 1/4 cups White Vanilla Baking Chips
1/4 cup Butter or Margarine
4 tsp. Grated Lemon Peel
2 tbsp. Fresh Lemon Juice
2 cups Powdered Confectioner’s Sugar

Place the cereal in a large mixing bowl.

In a small microwave-safe bowl, microwave white vanilla baking chips, butter, grated lemon peel and lemon juice uncovered on high for 1 minute and 30 seconds, stirring every 30 seconds until melted and smooth. Pour lemon mixture over cereal, stir until evenly coated.

Pour mixture into a 2-gallon resealable food-storage plastic bag. Add the powdered confectioner’s sugar. Seal bag; shake until well coated. Spread evenly on cooking parchment paper or waxed paper. Cool completely. Once cool store your snack mix in an airtight container.

Note: If you find that its too sweet you can reduce the amount of powdered sugar that you add. My kids and grandchildren like it sweet but I like it less sweet. When making a batch just for myself to enjoy I add less powdered sugar.
