Peanut Butter Popcorn Squares Recipes
Every weekend I like to spend a little bit of time making up after-school snacks for my kids. I will make a variety of different things like chopped up veggie sticks and dip, fruit and yogurt parfaits, gelatin and fruit cups, trail mixes, popcorn snacks, etc. I try to keep it fun and interesting for them.
Today’s guest post recipe is courtesy of Popcorn.org and will make approximately 12 squares. I’ve used their recipe a few times the past few months and both of my kids love them. I have to admit, I like them too.
Peanut Butter Popcorn Squares Recipes
1 cup light corn syrup
1 cup granulated sugar
1 cup peanut butter — smooth or crunchy
2 quarts popped popcorn
Combine corn syrup, sugar and peanut butter in a large saucepan. Bring to a boil while stirring constantly. Over low heat, boil for three minutes. Remove from the heat and add popcorn.
Toss with wooden spoons (mixture will be hot) to coat well and press into a greased 13 x 9 x 2 inch pan. Cool and cut into squares. Store squares in an airtight container.
