If you’re reading this review, chances are that either you or someone you know is on a ketogenic diet. Since a keystone of this diet is eliminating carbohydrates, bread-loving keto dieters can find themselves feeling deprived. Thankfully, there’s a new book to remedy that, called Keto Bread: From Bagels and Buns to Crusts and Muffins, 100 Low-Carb, Keto-Friendly Breads for Every Meal by Faith Gorsky and Lara Clevenger, MSH, RDN, CPT (Adams Media, September 2019).

The ketogenic diet is becoming more and more popular lately. The authors describe it as “a low-carbohydrate, moderate-protein, high-fat diet. When you reduce your intake of carbohydrates (your body’s usual source of energy), your body is forced to adapt and make ketones to use for energy instead.” The goal is to keep your body in a state of ketosis, “the state of having elevated blood ketone levels, meaning that your body is effectively burning fat for energy instead of carbohydrates.” The book’s introduction includes a lot more information about the keto diet to help you understand it and its effects on your body.
Keto Bread is intended to help you succeed by satisfying your cravings for bread products. You won’t find familiar all-purpose flour in these keto recipes; the authors explain that “Instead, we typically use low-carb, high-fat ingredients like coconut flour, almond flour, sunflower seed flour, flaxseed meal, and other similar flours.” Likewise, standard granulated sugar and honey are not part of a ketogenic diet, but that’s not to say you can’t create sweet baked goods. Many of the sweets in Keto Bread “opt for sugar substitutes that won’t cause a blood sugar spike.” The introductory section entitled “Demystifying Keto Baking Staples” goes into great detail describing some of the most-used ingredients in Keto Bread: Coconut flour, almond flour, psyllium husk powder, beef gelatin, flaxseed meal, chia seeds, stevia, erythritol, and monk fruit.
Fortunately for those of us accustomed to baking with standard ingredients, the authors have done all of the work for us in determining the keto-friendly ingredients to use in combination to create baked goods with textures not unlike our familiar breads, cakes, crackers, crusts, and more.
There are recipes for basics, such as:
• “White” Bread
• Pizza Dough
• All-Purpose Roll-Out Crust for Pies
• Soft Tortillas
• Waffles
There are also recipes for meals featuring your keto baked goods, including:
• Roasted Red Pepper, Spinach, and Mushroom Quiche
• Tomato Soup and Biscuits
• Spinach Curry with Naan
• Carne Asada Tacos
• Sloppy Joes on Sandwich Buns
• Pepperoni and Cheese Calzones
And because everyone loves snacks and desserts, Keto Bread also includes gems like:
• Seedy crackers
• Pretzel Bites
• Sweet Chocolate Hazelnut Biscotti
• Classic Yellow Butter Cake
• Pumpkin Pie
In short, Keto Bread is a must-have cookbook for anyone following a ketogenic diet who loves breads and baked goods!
