I’m the Mom to two school-aged children and I’m often preparing snacks for the kids to take to school to share with their classmates. On top of that, my daughter is involved with scouts, so every month I’m responsible for providing the snacks and beverages for her troop. I’m always looking for easy-to-make snack mixes that aren’t messy to serve, need no refrigeration and one that kids would enjoy.

Today’s guest post recipe is courtesy of Popcorn.org. It’s a great snack mix for the kids, for your upcoming Halloween & Autumn Harvest parties, as an after-school treat, etc. The recipe will make approximately 12 servings, so depending on the group’s size, you may need to double-up the ingredients.
Harvest Munch Popcorn Snack Mix Recipe
8 cups air-popped or stove-top popcorn
4 cups mini pretzel twists
1/4 cup butter
1/2 cup packed brown sugar
2 tbsp corn syrup
1 cup marshmallows
1/4 tsp salt
2 cups mini chocolate peanut butter cups
1 cup candy corn
Toss popcorn with pretzel sticks; spread out on large parchment paper–lined baking sheet; set aside.
In saucepan set over medium heat, combine butter, brown sugar and corn syrup; cook, swirling pan, for 3 to 5 minutes or until brown sugar dissolves and mixture is bubbling.
Stir in marshmallows and salt; cook for 30 to 60 seconds or until marshmallows are melted. Pour evenly over popcorn mixture. Sprinkle with mini chocolate peanut butter cups and candy corn. Let cool completely and break into clusters.

I think this would be great mixture for snacking while watching television. I love the different flavors and textures.
This is such a great twist on the traditional snack mix. I really like the eyeballs and know all kids (young and old) will enjoy those.
