If you never learned how to make pancakes from scratch, you can now. These recipes are super simple and will undoubtedly result in delicious, fluffy pancakes each and every time.

Recipe #1: Vegan Protein Pancakes

Do you need to bulk up minus animal consumption? These fluffy vegan pancakes will supply you with 15 grams of carbs without the guilt.

What could possibly make this better? 4 ingredients.

Your shopping list will be comprised of flour, protein powder, sweetener, and baking powder. Simple enough, right?

Ingredients

  • 1 c all-purpose flour
  • 1/4 c vegan protein powder of choice
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 2 tbsp pure maple syrup, stevia powder or liquid stevia drops
  • 1 c water + more as needed

Directions

  1. Mix dry ingredients together in a bowl.
  2. Add the maple syrup (or sweetener of choice), then slowly add the water, mixing until “just mixed.” It should be a little lumpy and quite thick. Add a little extra water if needed.
  3. Cook in a hot non-stick pan until bubbles appear in the center of each pancake. Flip and cook for a few more minutes.

Serve with your favorite fruit toppings, cacao nibs, or nut butter.

Recipe #2: Tasty’s Fluffiest Vegan Pancakes

Tasty is infamous for providing spectacular recipes, so we’re taking their word for it when they claim the fluffiest vegan pancakes.

Ingredients

  • 1 c flour
  • 2 tbsp organic sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 c non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla
  • maple syrup, to serve

Directions

  1. In a medium bowl, add the flour, sugar, baking powder, and salt, and stir to combine.
  2. In a medium bowl or liquid measuring cup, add almond milk, apple cider vinegar, and vanilla, and stir to combine
  3. Pour the liquid mixture into the dry mixture and whisk until smooth.
  4. Let batter rest for 5 minutes.
  5. Pour about ½ cup (65 grams) of batter onto a nonstick pan or griddle over medium heat.
  6. When the top begins to bubble, flip the pancake and cook until golden.
  7. Serve warm with maple syrup.
  8. Enjoy!

Recipe #3: Cinnamon Applesauce Pancakes

What kid doesn’t love applesauce? This recipe is a fall favorite and is guaranteed to taste delicious.

This recipe isn’t 4 ingredients, but it will only take 15 minutes.

Ingredients

  • 1 1/2 cups light or unbleached all-purpose flour
  • 2 tbsp coconut or organic pure cane sugar
  • 2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of nutmeg
  • pinch of mineral salt
  • 1 1/4 c unsweetened almond milk
  • 1/2 c unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil (divided), for greasing

Directions

  1. Heat griddle over medium to medium-high heat.
  2. Preheat oven to 200 degrees F, and place a baking sheet on the middle rack while the oven is heating
  3. In a large mixing bowl, add flour, sugar, baking powder, cinnamon, nutmeg, and salt, mix well.
  4. Add in the applesauce, non-dairy milk, and vanilla extract. Mix until just combined. Do not over mix. Your mixture may seem to swell up a bit due to the baking powder, this is normal.
  5. Clean and quarter an apple, remove the core. Cut into thin slices about 1/8 – 1/4 inch.
  6. Place 1 tsp of oil on the griddle/skillet and spread evenly over the cooking area.
  7. Place 2 apple slices on griddle, side by side, where pancake batter is going to cook.
  8. Scoop batter with a 1/4 measuring cup, and place on top of apple slices.
  9. Cook, until bubbles form on the top and edges, start to look leathery, about 2 1/2 – 3 minutes per side.
  10. Flip pancakes, cook another 2 – 3 minutes. Repeat until batter is gone.

Recipe #4: 5 Minute Vegan Pancakes

In a rush? Life gets crazy sometimes, and these 5-minute fluffy circles of greatness can save the day.

Ingredients 

  • 1 c flour (whichever kind you prefer)
  • 1 tbsp sugar (I used organic cane sugar)
  • 2 tbsp baking powder
  • 1?8 tsp salt
  • 1 c soymilk
  • 2 tbsp vegetable oil

Directions

  1. Set a stove element with a pan to medium heat.
  2. Combine the 4 dry ingredients in a bowl.
  3. Add the soy milk and vegetable oil to your mixture.
  4. Mix until smooth.
  5. Spoon one pancakes’ worth of the mixture into the pan.
  6. Flip when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
  7. Repeat until the batter is gone.

If you have children, this is the perfect before-school breakfast. Serve with their favorite toppings, and them to school happy.

Recipe #5: Easy Vegan Oatmeal Pancakes

Looking to add nutritious oats to your day? Superfood oats are an easy way to add protein, fiber, and antioxidants into your diet, and this recipe has just enough.

Ingredients

  • 1 c all-purpose flour, gluten-free blend if needed
  • ½ c oats, certified gluten-free if needed
  • 1 tablespoon coconut or organic cane sugar
  • 2 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp chia seeds
  • 1 ¼ c dairy-free milk
  • 2 tbsp melted coconut oil (plus more for cooking)
  • 1 tsp vanilla
  • 1 large banana, finely diced

Instructions

  1. In a medium bowl, whisk together dry ingredients.
  2. Add the milk, coconut oil, and vanilla and whisk in.
  3. Fold in the diced banana. If the batter seems too thick, add a splash more milk.
  4. Heat a griddle or large skillet over medium heat. Add a tablespoon of coconut oil to coat so that the pancakes don’t stick.
  5. With a 1/3 c measuring cup, spoon batter onto the griddle.
  6. Cook the pancakes on the first side until bubbles pop on the surface and the pancake seems mostly cooked through, but aren’t burning on the bottom.
  7. Flip and continue cooking until the other side is golden brown and the pancakes are cooked through.

As always, you can serve with maple syrup, fresh berries, nuts, and seeds, or your favorite nut butter.
