Grilled Chicken Pasta Salad with Cucumber and Onion
During the summer season I make a lot of homemade pasta salads. They’re the perfect dish to bring to potlucks, backyard barbecues, family reunions, and to all of your summertime parties. A pasta salad is always a BIG BIG BIG hit with the family.

Grilled Chicken Pasta Salad with Cucumber and Onion Recipe
20 oz. boneless skinless chicken breasts
2 tsp. vegetable oil
4 oz. tubetti
1/2 cup/2 oz. finely chopped red onion
1/4 cup/1/4 oz. finely chopped dill
1/2 cup/4 oz. low-fat Greek yogurt
1 1/2 cups/6 oz. cucumber preferably hothouse, small dice
2 tsp. lemon juice
Heat a grill pan or outdoor grill over medium high heat. Brush the vegetable oil on both sides of the chicken. Season with salt and pepper. Place the chicken on the grill and cook until nicely charred, flip and repeat on the second side.
Depending on thickness, 4 to 5 minutes per side should cook the chicken through. When cool enough to handle, chop the chicken into ½” chunks. While the chicken is cooking, bring a large pot of salted water to a boil. Cook the tubetti according to package directions. Drain and reserve.
In a large bowl, stir together the red onion, dill, yogurt, cucumber, and lemon juice. Season with salt and pepper. Stir in the chicken and yogurt. Taste and adjust seasoning. Divide between 6 bowls.
