How many of you enjoy eating baked Macaroni and Cheese? It’s one of those classic foods that I enjoy and both of my kids are big fans too! If I had to guess, I would estimate that I make homemade Mac & Cheese 2-3 times every month. To keep things interesting, I’m always looking for new ways to prepare it.
Today’s guest-post recipe is courtesy of Popcorn.org. The recipe yields 4 servings, but for a family of four, I would recommend doubling it, so that everyone can have seconds or to enjoy leftovers the next day. Here’s their recipe.
Popcorn Crusted Macaroni and Cheese Recipe
8 ounces elbow macaroni
4 tablespoons butter, divided
2 tablespoons flour
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
1-8 oz. (2 cups) package shredded sharp cheddar cheese
5 cups popped popcorn
1/2 teaspoon parsley flakes
Preheat oven to 350º F. Butter an 8×8-inch baking pan with 1 tablespoon butter; set aside.
Cook and drain macaroni according to package directions; set aside. Melt 2 tablespoons butter in a medium saucepan over medium heat. Whisk in flour, mustard, salt and pepper; cook 2 minutes, stirring frequently. Whisk in milk and cook, stirring frequently, until mixture thickens; about 10 minutes. Stir in cheese until cheese is melted and sauce is smooth. Stir macaroni into sauce; pour macaroni mixture into prepared pan. Melt remaining tablespoon of butter and toss with popcorn and parsley flakes. Spread popcorn over macaroni and bake 10 minutes. Remove from oven and serve immediately.

I never thought to add popcorn to mac n’ cheese. It would add another texture. I might try it.
I love me some mac and cheese and I love popcorn. Now I am curious to try this recipe it sounds super good and something different thanks for sharing.
That is a neat twist. I like mac and cheese almost any way imaginable. I think the popcorn would add a differnt type of topping. I might give this a try.

OK, so I’m strange. I have never liked mac & cheese. No matter how it’s cooked. I do like popcorn.
I never would’ve thought of adding popcorn. It would taste good, especially if you used the buttered popcorn, like in theaters. Lol, I guess that wouldn’t be great for cholesterol levels, though!
