Keto and Protein Pancake & Waffle Mixes from Happy Day Brands

Keto and Protein Pancake & Waffle Mixes from Happy Day BrandsRecently Happy Day Brands generously sent me a nice selection of their all-natural food products to try. To do them justice, we’ll be featuring them in three different posts. Today I’m focusing on two delicious and oh-so-easy mixes, Keto Pancake & Waffle Mix and Protein Pancake & Waffle Mix.

Although I’m usually a from-scratch cook, I do like the convenience of having good mixes on hand, and both the Keto and the Protein Pancake & Waffle Mixes taste great and are healthful, too! Both varieties are definitely mixes that I’m proud to use and serve.

Happy Day Keto Pancake & Waffle Mix

In keeping with the keto diet’s principles, Happy Day Keto Pancake & Waffle Mix is low-carb. It’s made with gluten-free flours (almond, coconut, and cassava) and dried egg, with monk fruit and cinnamon for a touch of sweetness. But even if you don’t follow the keto diet, this mix is a simple way to serve tasty grain-free breakfast fare, not necessarily for breakfast.

Happy Day Protein Pancake & Waffle Mix

Likewise, the Happy Day Protein Pancake & Waffle Mix is both nutritious and delicious. It’s made with whole-grain wheat and oat flours, with whey and wheat gluten proteins for a huge protein boost. These all-natural, non-GMO mixes just require the addition of water to make pancakes, or water and oil for waffles, although for extra protein, an egg can be added and/or milk can be used in place of the water.

Keto Pancake & Waffle Mix

For my first time using the Keto Pancake & Waffle Mix, I followed the instructions exactly, making a small batch of pancakes. The pancakes were delicious, thick with a nice cakey texture, rich and slightly sweet. For subsequent batches, I found that increasing the amount of water thinned the batter for more traditional looking pancakes.

Protein Pancake & Waffle Mix

I pulled out my waffle maker to try the Protein Pancake & Waffle Mix, and I’m so happy I did! The waffles were perfect, with a crispy exterior and a fluffy interior (better than many from-scratch recipes I’ve tried). Because these waffles are high in protein, I’m comfortable serving them without a side of eggs or meat—just some juice or fruit, and I’m good to go. The instructions are for making two 4-inch waffles, so I increased the ingredient amounts to accommodate the larger capacity of my Belgian waffle maker, making two big waffles.
